As we all know rice is definitely forbidden for the Ketogenic diet (full carb). Cauliflower rice is one of the most popular rice substitute. Yeah, I didn’t quite believe that too when I first heard about that. A veggie for rice? However, after I tried it, I have to change my mind. Well, it’s not the exact same feeling but it’s good enough to work as a substitution in any recipe that calls for serving over a bed of rice.
What we can do with Cauli-rice is to steam, stir-fried or sauté. But for this time we’ll use the oven to give more nutty taste.
Total time: 30-35 minutes

Ingredients
- 1 head, Cauliflower
- 1 tbsp, Coconut Oil (you can substitute this with butter)
- pinch of Salt
Cooking
- Remove leaves and stem from cauliflower, put it into food processor until it looks like rice or you can use a box grater.
- Pre-heat the oven for 400F
- Mix the rice with oil and salt in a bowl.
- Spread the rice on a single layer of aluminum foil and put into the oven around 20-25 minutes or until it’s beginning to get a few brown spots.
- Serve with your menu of choice!
